Introduction to frying process:

Frying is to put the quantitatively cut noodle cakes into the frying box, and through the high-temperature oil sink, the water in the noodle cakes evaporates rapidly, forming a porous structure in the noodles, and the starch is further gelatinized.

Specific operation: Control the transmission speed of the frying box to control the frying time. Control the front temperature, middle temperature and back temperature of the fryer to ensure the frying effect. These are mainly done by regulating the oil flow.
